The Scoop

Embedded in the warren of narrow passageways that make up Fes's medieval Medina, this luxurious riad has a design sense that reflects its Berber, Andalusian, and European influences. The 26 rooms and suites—decorated with tile mosaics, carved cedar furnishings, locally woven rugs, and tadelakt or Carrara marble baths—are lovely, but the riad's common areas are the true showstoppers. As well as a grand Moorish atrium, with two stories of painstakingly restored carved arches and columns, there's also a colonnaded patio with a fountain-fed reflecting pool and an alfresco bar offering cigars and cocktails. At day's end, the place to be is the atmospheric roof terrace, with its panoramic view of the Medina and the Atlas Mountains beyond.

Amazing Views: Chouwara Tannery. The largest and most photogenic of Fes' four remaining medieval tanneries is the Chouwara Tannery, a honeycomb of colorful—and rather aromatic—round pools. Come in the morning for the busiest activity; any shop along Derb Chouwara will invite you onto its roof for a view.

Best Cocktails: Hotel Batha. In such a conservative town, cocktails are hard to come by, but for years the best place to imbibe has been the Medina hotel of Hotel Batha—either in its Churchill lounge (once part of the British consulate) or at Le Consul bar in the back, which stays open until the wee hours. Top Shopping: Aux Merveilles du Tapis. If you're looking for quality Berber rugs and kilims, but don't want (as much of) the typical hard sell, head to Aux Merveilles du Tapis.
